Oats make a great filling breakfast, as their slow-release starch keeps hunger at bay. Also very good for lowering LDL cholesterol. The Brazil nuts boost selenium and zinc levels - each serving providing 40% of the selenium and a third of the zinc we need each day.
Ingredients
130g/4oz Rolled Oats
80ml/3fl oz Red Grape Juice
2 tbsp Live Natural Yoghurt
1 Ripe Banana
2 Fresh or Dried Figs
1 Peeled and grated Apple
1 Peeled and chopped Pear
8 Chopped Brazil nuts
2 tbsp Maple Syrup or runny Honey
Method
Place the oats and dried fruit in a small bowl, cover with the grape juice and soak overnight to soften and hydrate. When you are ready to serve, add the yoghurt. Spoon the oat mixture into breakfast bowls and top with fresh fruit. Sprinkle with the chopped Brazil nuts and drizzle with maple syrup or honey.
